A GREAT TOPPING

Don’t want your raspberries to go to waste? Make a compote! Raspberries have a great source of fiber, vitamin C, vitamin E, vitamin K, folate and potassium. Use this compote in place of syrup for your pancakes, as a dessert topping or even as a sweet addition to your oatmeal or cereal.

Ingredients

  • 1 pint raspberries
  • 1 quart water
  • 1/2 cup sugar

Instructions

  1. Bring water to boil.
  2. Add raspberries and sugar.
  3. Allow to boil until desired thickness, about 25-45 minutes.
  4. If compote is not thick enough and a cornstarch and water slurry.
  5. Try strawberries, blueberries, peaches, etc. in place of raspberries if you would like (:
