A GREAT TOPPING
Don’t want your raspberries to go to waste? Make a compote! Raspberries have a great source of fiber, vitamin C, vitamin E, vitamin K, folate and potassium. Use this compote in place of syrup for your pancakes, as a dessert topping or even as a sweet addition to your oatmeal or cereal.
Ingredients
- 1 pint raspberries
- 1 quart water
- 1/2 cup sugar
Instructions
- Bring water to boil.
- Add raspberries and sugar.
- Allow to boil until desired thickness, about 25-45 minutes.
- If compote is not thick enough and a cornstarch and water slurry.
- Try strawberries, blueberries, peaches, etc. in place of raspberries if you would like (:
