This recipe is low in carbs, fat and calories. You can make this fort for lunch, dinner or as a side! We used fresh basil and spices to boost the flavor. You can use a variety of vegetables to spiralize such as carrots and beets! Nutrition tip: For a low sodium meal, use herbs like parsley, basil or cilantro in place of added salt or seasoning mix (with added salt).

Ingredients

Basil Pesto

  • 2 cups fresh basil leaves
  • 1 garlic clove, diced
  • 1/2 small yellow onion, diced
  • 1/3 cup olive oil
  • Salt, to taste

Zucchini Noodles

  • 3 large zucchini, spiralized (using spiralizer tool)
  • 1 1/2 cups cherry tomatoes, halved
  • Fresh basil leaves, for garnishing

Instructions

Basil Pesto

  1. In a food processor, combine the onion, garlic, basil, olive oil.
  2. Blend until smooth and season with salt, to taste.

Zoodles

  1. Spiralize the zucchini with a spiralizer.
  2. Toss the zucchini with pesto until well coated, and season with salt.
  3. Add cherry tomatoes and mix.
  4. Garnish with fresh basil.
